Pancakes are the best kind of cure, breakfast, lunch, dinner & dessert, we don’t care what anyone else says #PancakesForTheWin. The Honest Grazer couldn’t agree more. Her delicious Double Choc Chip Berry Protein Pancake stack is dense, full of nutritious fiber (tummy filler) and topped with antioxidants and deliciousness.
WHAT YOU NEED:
Makes approx. 6-8 pancakes
1 cup Chocolate Oats
2 tbsp Kauai Cocoa Plant Protein Powder
1 tsp baking powder
½ tsp baking soda
¼ tsp sea salt
1 tbsp apple cider vinegar
1.5-2 cups almond milk
1 tsp vanilla essence
1/2 slab Chocolate bar (coarsely chopped)
TOP IT WITH:
Nut butter (Try our Kauai Nut Butters! We’re nutty about them)
WHAT YOU NEED TO DO:
Mix the oats, protein powder, baking powder, baking soda and salt and blitz in a blender until it reaches a course sandy texture. Add in the liquids and blend again. The mixture should resemble a runny muffin batter. Heat coconut oil in a pancake pan over a medium heat and scoop two tablespoons of batter into the pan. Spread it a bit until it forms a circle and then sprinkle over the chopped goji berry chocolate. Let it cook until the sides start to harden and then flip to cook through on the other side. Repeat until the batter is finished.
PERFECT THE PANCAKE STACK:
Layer 1: Pancake
Layer 2: Nut butter (or try it with chocolate)
Layer 3: Crushed raspberries
Repeat with 3-4 pancakes and then top off with coconut cream, goji berries, cacao nibs and more raspberries.
